Vegetarian Stuffed Peppers

The best thing about this recipe is that you can add as many vegetables as you please! Onions and mushrooms are great options. If you're not in the mood for vegan, add shredded cheese and grate it!

Every once in a while I like taking a break from eating meat, and I prepare a delicious vegetarian meal for my husband and kids. When I told them about a meatless dinner that involved vegetables, the kids weren't that excited about it. I knew that I would prove them wrong, and I did! They loved the combinations of the peppers with basil and garlic. Plus, it is a healthy meal that's super easy to make!

  1. Preheat oven to 425° F.
  2. Lightly oil a large shallow baking pan. Cut peppers in half lengthwise and remove seeds. Arrange peppers cut sides up in the baking pan and lightly oil the cut edges of stems. Halve cherry tomatoes and chop onion and basil. Finely chop garlic.
  3. In a bowl, toss tomatoes, onion, basil, garlic, olive oil, salt and pepper to taste. Spoon equal portions of mixture into peppers and roast in upper third of oven until peppers are tender, about 20 minutes.

Chef Notes

You can add avocado to this recipe, or your favorite protein if you don't want to go vegetarian.
