This tuna salad recipe is easy to make, healthy, and satisfying. It’s also packed with protein, healthy carbs and vitamin C. It's perfect as a packed lunch for the office or to whip up at home!
Ingredients
- 2 cups white beans cooked, al dente
- 1 red bell pepper chopped
- 1 green pepper chopped
- 2 green onions chopped
- 2 tbsp capers
- 2 tbsp lemons preserved
- ¼ cup cilantro minced
- ¼ cup parsley minced
- 1 can tuna (5 oz.)
- 2 lemons juiced
- olive oil to taste
- salt to taste
- pepper to taste

Directions
- Pre-heat the oven to 450 °F. Place the chopped green and red peppers, side down, on a baking sheet with parchment paper. Roast the peppers in the oven for 20 to 25 minutes; or until the skins are are charred. Rotate the peppers as needed. Allow the peppers to completely cool.
- Combine all ingredients in a bowl. Add the olive oil, lemon juice, salt and pepper to taste.
- Refrigerate for 30 minutes and serve.
