“Tú Eres Mi Reina” Arepa Pepiada

Ingredients

  • 2 Avocados from Mexico mashed
  • ½ cup Mayonnaise
  • 1 tablespoon fresh lemon juice
  • 2 cups cooked chicken breast shredded
  • ¼ cup red bell pepper diced
  • ½ small red onion diced
  • 2 tablespoons cilantro finely chopped
  • 2 tablespoons parsley finely chopped
  • ½ jalapeño diced
  • ¼ teaspoon salt
  • For the arepa:
  • 2 cups corn flour
  • 2 ¼ cups water
  • 1 teaspoon salt
  • ¼ teaspoon olive oil

Directions

  1. In a medium-sized bowl, mix the mashed avocado with mayonnaise and lemon juice. 
  2. Add chicken, bell pepper, onion, cilantro, parsley, jalapeño and salt. Stir until well combined.
For the dough
  1. Combine the corn flour and salt in a medium-sized bowl. Slowly add the water and knead the dough until you form a uniform mixture.
  2. Use your hands to shape the dough into 4 balls and flatten them gently to create discs.
  3. Heat the olive oil in a medium-sized skillet over medium heat. Add the arepas and cook for about 6 minutes on both sides.
  4. Cut the arepas in half and fill them with the chicken avocado mixture.
  5. Serve
