Toasted Chipotle Pork Loin

This Toasted Chipotle Pork Loin recipe was my abuela's favorite dish for Christmas dinner. Among other typical dishes such as Romeritos and Bacalao, this was the star of the night. Its charcoal color and spicy texture creates a unique flavor you'll never forget.

 

Ingredients

  • 5 lbs fresh pork loin
  • 10 cup dry chipotle chiles or 1 can adobados
  • 2 cups tomatoes chopped
  • 1 cup white onion chopped
  • 1 cup broths
  • 2 garlic cloves
  • 3 tsp cumin grounded
  • 2 tsp dried Mexican oregano
  • 3 cloves
  • 3 bay leaves
  • 2 tsp grounded cinnamon
  • 1 cup pork lard for frying
  • 1 cup butter
  • 4 tsp sea salt
  • 2 tsp ground pepper
  • 1/2 lbs baby potatoes cut in halves
  • 1/2 lbs baby carrots

Directions

  1. Turn the oven to 375º F
  2. Bring a big saucepan to high heat, add the pork loin and seal all 4 sides until brown and crispy, 7 minutes per side. Once browned, take out and reserve on the side. Top with salt and pepper.
  3. Using the same pan and the remaining lard, add butter and leave on high heat, adding tomatoes, chipotles, onion, garlic, cloves, cumin, oregano, bay leaves, cinnamon, salt an pepper. Cook for 10 minutes until the ingredients are well cooked and toasted (literally)
  4. Once ready, blend the ingredients with beef broth.
  5. Prepare an oven safe deep tray, pouring the sauce, the pork loin and the potatoes and carrots, cover with aluminum foil or place in an oven safe bag.
  6. Cook for 1 hour in the oven.
  7. Once ready serve in a big platter with a sprinkling of vegetables on top.
