Tequila Chipotle Shrimp with White Rice

This Tequila chipotle shrimp recipe is quick and easy. And if you don't want to have it with white rice, you can also pair it with tacos! The tequila gives it a little kick but the alcohol evaporates so it doesn't quite taste like tequila but it does give it a different taste.


  • 2 chipotle chiles in adobo
  • 1/2 cup tequila
  • 2 tablespoons fresh lime juice
  • 1 tablespoon ketchup
  • 1 tablespoon adobo sauce from chipotle can
  • 1 clove garlic chopped
  • 2 teaspoon packed light brown sugar
  • 1/4 teaspoon salt
  • 1 pound medium shrimp shelled and deveined
  • 2 tablespoon olive oil
  • 2 cups white rice cooked

  1. In blender, mix the chipotles, tequila, lime juice, ketchup, adobo sauce, garlic, sugar and salt until smooth.
  2. Put shrimp in a glass bowl, mix with the blended sauce. Marinate at room temperature for 20 minutes.
  3. Strain shrimp - do not discard the sauce, reserve it for now. .
  4. In a large skillet over high heat, add oil. Add shrimp and cook, tossing and stirring until cooked; about 2 minutes. Serve in a dish.
  5. In the same pan, add the reserved marinade to pan, bring to a boil, scraping pan often, turn off the heat after it boils.
  6. Serve shrimp with cooked white rice and pour sauce over shrimp. Enjoy!
