Super-easy and super tasty Spanish rice that you can transform into a salad the next day.

This Spanish rice recipe is crazy simple and absolutely bursting with flavor. I use the rice cooker to precook the rice and it turns out perfect every time! This side dish pairs really well with my Spanish meatballs, and if you have leftovers, it's also amazing as a salad. Take it out the next day, throw in some corn and fresh onion and voila! You have yourself a tasty rice salad.

This is not the traditional Spanish rice recipe, but it's super simple and it's always really good. So if you are in a hurry and want a quick and tasty rice dish, this is for you.

If you don't have a rice cooker, just cook your rice as usual (replacing water for stock) and follow the rest of the directions.

  1. Add rice and chicken broth to rice cooker and cook per your rice cooker's directions.
  2. In a large skillet, add all other ingredients and simmer on low, stirring often while the rice cooks.
  3. When rice is cooked, add it to the sauce and stir gently until the rice is completely coated with the sauce.
  4. Serve with chopped chives or fresh chopped onion.
