It’s that time of year when we can eat all things pumpkin! Soups, desserts, coffee and everything tastes like pumpkin this month. This pumpkin pancake recipe is fantastic, easy to make, and super rica. The spicy kick of cayenne combines wonderfully with the sweet fluffiness of the pancake. Enjoy!
Ingredients
- 2 cups flour
- 1/3 cup sugar
- 5 teaspoons baking powder
- 1/4 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/2 teaspoon cayenne pepper
- 1 1/2 cups milk
- 2 eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree
- 1/2 cup butter for cooking
- maple syrup for topping

Directions
- In a large bowl, whisk together the flour, sugar, baking powder, nutmeg, cinnamon, and cayenne pepper. Pour milk, eggs, oil, vanilla, and pumpkin puree and stir until the batter comes together.
- Heat a large skillet over medium heat. Add 1 tsp butter per pancake and pour the batter by 2 tablespoons onto the skillet. Cook 3-4 minutes, or until large bubbles appear.
- Flip and cook 2-3 minutes on the other side. When ready to serve, top with maple syrup.
