If you were a kid growing up in a Mexican family, you may remember those candy paletas (lollipops) that were mango flavored and dipped in chile limón seasoning!! They were my absolute favorite to buy when we would go to Mexico. I was inspired by those flavors to make this salsa, sweet, tangy yet spicy. And I added just a touch of cilantro for that extra fresh flavor! There are some nights when I like to just prepare a couple of appetizers for dinner, it makes for a fun night. Well, I have to admit that even to this day, whenever I get a chance, I still buy candy paletas and enjoy them now as much as I did when I was a kid!
Peel and dice the mangos. Remove seeds and stems from Habanero peppers.
Combine all of the ingredients in a food processor or blender. Pulse to blend, leaving some texture to the salsa. Taste for salt.
Serve this as an appetizer with fried plantain chips, tortilla chips, or as a garnish for pork or seafood.
The fried plantain chips were seasoned with chile limón powder and paired well with the mango salsa. The Mexican Tajín brand is one of the most popular for chile limón and can be found in most stores that carry Mexican spices or Mexican candies.
