A no fuss, one skillet wild mushroom queso fundido dish is just what you need on your menu tonight. Deliscious and so easy to make!
What's better than a piping hot dish of queso fundido? And what if it was all done using just one pan? No need to bother with the oven for this recipe. I will never forget the first time I prepared this delicious warm cheese dish at a cooking class I was teaching. The students went on and on about how wonderful the recipe was. It inspired many of them to prepare this dish for their friends and family. This is a fairly quick dish to cook and should only be prepared right before you serve it. Warm tortillas are traditional for serving queso fundido, but tortilla chips are also delicious!
1 1/2tablespoons grapeseed oil
1small sweet onion sliced into strips
1clove garlic minced
1-2 jalapeños or serranos, minced
1cup grape tomatoes sliced in half
6ounces cremini or button mushrooms, sliced
1/4cup dark Mexican beer optional
2 1/2cups Monterey jack or chihuahua cheese, shredded
Heat 1 ½ tablespoons of oil to medium in a a large skillet. Add onion, garlic and jalapeño. Sauté for 5 minutes.
Add tomatoes. Season lightly with salt and pepper and sauté for 2-3 minutes.
Add mushrooms and sauté for another 5-6 minutes or until mushrooms become soft. Add a pinch of salt, pepper and beer. Stir well to combine and heat for 1 minute.
Fold in the cheese until it melts, cover and remove from heat. Serve with chips or warm tortillas.
Sauté or roast vegetables, chilepeppers, garlic and onions before adding them to your queso fundido dish. Melting cheese, such as mozzarella, Oaxaca, Chihuahua and muenster are good choices for this recipe.
