Ingredients

  • 1 pound jumbo shrimp deveined, peeled, and tails removed
  • 1 red onion large, cut into julienne strips
  • 1 sweet pepper cut into strips
  • 1 tablespoon cilantro chopped
  • 1 cup lemon juice
  • salt to taste

Directions

  1. Boil a large pot of water. Cook the shrimp in the boiling water for one minute.
  2. In a mixing bowl, place the shrimp with the rest of the ingredients, let stand for half an hour and serve. Enjoy!
