What's better than a sandwich - a sandwich with Christmas leftovers, of course! The day after the holiday feast, the last thing you want to do is spend hours in the kitchen. This sandwich only takes a few minutes and can be made with leftover turkey, pork, or any other protein.
The key is to grill it until it's crispy and the cheese is melted. And if you have leftover gravy, use it as a dip and make your own version of the classic French Dip — call it Turkey Dip!
Ingredients
- 2 tablespoons Dijon mustard
- 2 slices sandwich bread of your choice
- 2 slices mozzarella cheese
- 1/3 cup leftover roast turkey shredded
- 2 tablespoons Mayonnaise
- 1 teaspoon canned chipotle chile (just the liquid) or more to taste
- 2 tablespoons butter at room temperature
- 3 tablespoons leftover gravy (optional for dipping)

Directions
- Spread the mustard on one slice of bread, and the mayonnaise on the other.
- Lay a slice of cheese on each slice. On one slice, arrange the turkey and top with the liquid from the chipotles.
- Carefully join the two halves into a sandwich, then spread the top side of the bread with 1 tablespoon of butter.
- Using a sandwich maker, press down over the sandwich and grill until the bread is crusty and golden, the fillings are hot, and the cheese is melted. If you don't have a sandwich maker, you can use a grill pan or skillet over medium-low.
- Pull the sandwich off the heat and slice it in half.
- Dip in leftover gravy (optional) and enjoy!
