Avocado Salsa (Salsa de Aguacate)

Salsa de Aguacate, or Avocado Salsa, is a spicy and creamy salsa that is the perfect topping to any Mexican food. Don't confuse Salsa de Aguacate with guacamole, though. There's a big and yummy difference. Enjoy!

Ingredients

  • 1/2 onion quartered
  • 3 tomatillos
  • 1 garlic clove
  • 1 jalapeño pepper
  • 4 cups water
  • salt to taste
  • Handful of fresh cilantro
  • Juice of 2 limes
  • 2 avocados pitted
  • 1 tablespoon olive oil or 1 tablespoon sour cream (optional)

Directions

  1. Put tomatillos, onion, garlic, and jalapeño in a large stock pot with enough water to cover them.
  2. Bring to a boil. Let boil 6-8 minutes, or until tomatillo is soft.
  3. Turn off stove.
  4. Add cooked tomatillo, onion, garlic, and jalapeño to a blender along with 1 cup of the water used in boiling.
  5. Discard the rest of the water. (Be very careful. It will be very hot.) Blend until smooth.
  6. Add salt, cilantro, lime juice, avocado. Also add olive oil or sour cream (if using). Blend until smooth.
  7. Taste for salt, serve and enjoy!
