Creamy and aromatic horchata-like drink. Serve iced cold and have a sweet day!

Resbaladera is a Panamanian creamy and aromatic drink made with rice, barley and spices such as nutmeg and cinnamon. Though creamy, it's uniquely refreshing. I love accompanying this drink with sweets such as alfajores. There's no such thing as too sweet!

 

Ingredients

  • 1/2 pound rice
  • 1/4 pound barley
  • 1/2 teaspoon nutmeg
  • 1 stick cinammon
  • 1 teaspoon vanilla extract
  • 8 cups water
  • ice to taste
  • sugar to taste

Directions

  1. Soak barley and rice in water overnight
  2. Cover barley and rice with water (2-3 inches above the top). Add cinnamon stick and boil until cooked (approximately 20 minutes)
  3. Remove the cinnamon stick. Take a portion of the barley and rice, and blend. Use the water used for cooking. Add vanilla, salt, and nutmeg. Add sugar to taste.
  4. Filter the blended liquid through a strainer into a large bowl. Use a spoon to press down and squeeze as much liquid out as possible.
  5. If liquid is too thick, you can add more water. If it is not thick enough, you can blend the rest of the rice and barley. Find the consistency you like!
