Queso Fundido With Peppers and Chorizo

The Mexican version of cheese fondue. Perfect to share.

Cheese lovers unite! This queso fundido with peppers and chorizo is melted cheesy goodness in every single bite. This is a must for any party or game day celebration. Sometimes I keep it simple with just Monterey Jack cheese; other times I mix it up with a variety of cheeses, like smoked mozzarella or gouda along with the Jack, for an extra jolt!

This snack or appetizer is wonderful when paired with tortillas or veggie sticks. 

Ingredients

  • 8 ounces monterey jack cheese shredded
  • 1/4 cup poblano peppers roasted and diced
  • 1/4 cup red bell peppers roasted and diced
  • 1/2 cup Mexican chorizo cooked (after cooking the chorizo, drain on paper towels)

Directions

  1. Preheat oven to 350ºF.
  2. Combine all ingredients in a small casserole dish and bake, covered, at 350ºF for 20 minutes. Uncover and cook under broiler for 2 minutes. Combine all ingredients in a small casserole dish and bake, covered, at 350ºF for 20 minutes. Uncover and cook under broiler for 2 minutes.
  3. Serve with chips, veggie sticks or as a taco filling.

Chef Notes

For variation, you could add some cooked shrimp on top, drizzled with barbecue sauce or shredded chicken drizzled with a spicy buffalo sauce.
