  1. Cut the tortillas into hearts using a heart shaped cookie cutter.
  2. Heat the olive oil in a medium skillet over medium-high heat. Add spinach and salt and cook until spinach is wilted.
  3. Add egg whites and scramble until cooked through.
  4. Spread the smashed avocado over four of the heart-shaped tortillas, and add the Monterey Jack cheese and scrambled egg mixture. Top with the remaining heart-shaped tortillas.
  5. Heat a medium skillet over medium-high heat. When hot, add one quesadilla at a time and cook until the cheese is melted and the tortilla starts to brown on both sides, about 3-4 minutes.
  6. Serve.
