Pollo Relleno with Creamy Cilantro Sauce

Here's an easy and surprisingly elegant main course to serve at a dinner or holiday gathering.

Stuffed chicken breast, or pollo relleno, is an easy way to elevate your basic chicken into a gourmet meal. And you can do it with just a few simple ingredients. I chose turkey ham and mozzarella cheese for my filling, but you can experiment with your favorite ingredients and flavors. There's almost no end to the combinations you can put together, and the creamy cilantro sauce pairs well with almost anything!

 

Ingredients

  • Pollo relleno
  • 6 chicken breasts flattened
  • 6 slices mozzarella cheese
  • 6 slices turkey ham
  • salt and black pepper to taste
  • Creamy cilantro sauce
  • 1 teaspoon freshly ground black pepper to taste
  • salt to taste
  • 2 cups Mexican crema
  • 1 tablespoon garlic minced
  • 1 package (8 ounce) cream cheese softened
  • 1 cup cilantro leaves

Directions

  1. Begin by preheating your oven to 400º F.
  2. Lay your chicken breasts on a flat surface. On one side, place 2 slices of ham, a slice of cheese, and salt and pepper to taste. Roll up and secure with a toothpick.
  3. Repeat this process until all of the chicken breasts are assembled. Reserve.
Creamy Cilantro Sauce
  1. Combine cream cheese, salt, pepper, garlic, cilantro and crema in a blender and mix until smooth and creamy.
  2. Place the chicken breasts on a baking dish, cover with cilantro sauce and aluminum foil, and bake for 20 minutes.
  3. Serve with a side of white rice.
