Tasty quesadillas are not always on the savory side. This peanut butter and banana quesadilla with dulce de leche is one that the whole family will enjoy. You might accidentally pack it in your lunch box instead of your kids'!
There are so many options when it comes to preparing quesadillas. You can choose flour or corn tortillas. You can make them savory or sweet. The sky's the limit when it comes to choosing a filling for your quesadillas. This quesadilla is ideal for a quick after-school snack, easy lunch or even a quick dessert. In my opinion, peanut butter and bananas are a perfect pairing.
Preheat large skillet or griddle pan to medium heat for a 2-3 minutes.
Spread peanut butter on one half of flour tortilla. On the other half, spread the dulce de leche. On the peanut butter side, add thin-sliced bananas, then top with some mini marshmallows. Fold over to cover and make a taco shape.
Add 1½ tablespoons of butter to hot pan. As soon as butter melts, place quesadilla into pan. Cook for a few minutes per side or until crisp and golden brown in color.
Transfer quesadillas to a cutting board. Sprinkle lightly with cinnamon and sugar. Let cool for a few minutes. Use a large straight edge knife or pizza cutter to slice quesadilla into 4 wedges. Serve with extra banana slices and dulce de leche.
