Overnight Crockpot Cajeta Oatmeal

Who doesn’t need a sweet and hearty start to the day? This oatmeal recipe cooks while you sleep, and lets you wake up to a meal that will give you plenty of energy and fiber for your day. And if you need help getting your kids to eat their breakfast, this is one dish they're sure to love. I like mine with plenty of cajeta, but you can adjust the sweetness as needed. Best of all, you won't need to keep an eye on it.... but you might dream about it!

Ingredients

  • 1 cup steel cut oats
  • ½ cup raisins
  • 1 cup cajeta
  • 2 cups milk
  • 2 teaspoon vanilla extrac
  • 2 cinnamon sticks
  • 1/4 teaspoon salt
  • ½ cup shredded coconut for garnish

Directions

  1. Use an oven-safe, not-too-shallow bowl or baking dish that will fit in your crock pot or other type of slow cooker.
  2. Place your dish inside the slow cooker, and in it add the oats, raisins, cajeta, milk, vanilla, cinnamon and salt; stir to combine.
  3. Slowly pour water into the slow cooker until its level is about 1 inch below the top of the baking dish.
  4. Cover and cook on LOW for 8 hours. Stir before serving and top with shredded coconut. Buen provecho!
