Chipotle Jicama Salad

This crunchy and spicy jicama salad is healthy, original and super easy to prepare.

I grew up enjoying fresh fruits seasoned with lime juice, chile powder and salt. My favorite was always the jicama slices. It's slightly sweet and has a very crisp texture, almost like a potato. It is mostly eaten raw, rarely cooked and takes on the flavors of any foods it is combined with. It's great on it's own or add it to your favorite salsas and salads.

This chipotle jicama salad is super easy to prepare and perfect for the summer!

Ingredients

  • 1 orange juiced, plus zest
  • 5 tablespoons rice wine vinegar
  • ¼ cup olive oil
  • 1 tablespoon chipotle hot sauce
  • Fresh cracked pepper
  • 1 small jicama cut into julienne strips
  • cilantro for garnish
  • salt for garnish

Directions

  1. Cut the jicama into julienne strips and set aside.
  2. Whisk all of the dressing ingredients together, and mix into the jicama.
  3. Add salt to taste and garnish with a little cilantro. Allow the salad to marinate for 30 minutes before serving.
