Who wouldn't love some mini chorizo pizzas? Adults love them, kids absolutely love them! This easy lunch idea of preparing mini chorizo pizzas has and is still very popular. I remember when I was a kid, my mom would let us pick out different toppings. Besides chorizo, I enjoyed toppings such as ham and pepperoni. We would often enjoy these as a snack after school. If we planned ahead, we would prepare them and back them in our lunch boxes to take to school.
6 English muffins
2cups Mild tomato salsa (homemade or store bought)
1cup mozzarella cheese shredded
1 cup monterey jack cheese shredded
8ounces Mexican-style chorizo previously cooked and crumbled
Slice the English muffins open and place onto baking sheet. Drizzle each muffin with a little olive oil. When oven reaches 400ºF, toast the muffins for 10 minutes. In a bowl, combine the two cheese varieties.
Remove muffins from oven. Spread 1 full tablespoon of salsa onto each one. Add 1 tablespoon of cheese. 1 tablespoon of crumbled chorizo and then finish with a little more cheese.
Place back into oven and bake for 7-8 minutes or until cheese melts. To brown cheese a little more, place under the broiler for less than 1 minute or until cheese begins to brown. Garnish with remaining salsa, cilantro and avocado.
When preparing mini pizzas don't overload the muffin with salsa and toppings. The muffin will get soggy and it may fall apart.
