The perfect meal for a lazy, day-after-Thanksgiving day.
Not sure what to do with all that leftover food? Here's an awesome and easy idea that is a bit out of the box: Mexican Turkey Leftover Bowl. If you want a healthier variation of the recipe below, you can replace the rice for quinoa, or even lettuce! The secret of this favorite in my house is cooking the leftover turkey with a bit of Mexican chorizo. You can mix canned ingredients like the red beans, corn and salsa verde with fresh ones, like the avocado, cheese and cilantro.
Cut the leftover turkey meat in small diced cubes. Take each chorizo out of its lining. In a frying pan, reheat the turkey meat with the chorizo. No extra oil is needed, the chorizo will release plenty. Cook on medium-high heat for 6 to 8 minutes, until the chorizo is crunchy.
Serve white rice in each serving bowl. Add the turkey chorizo mix on top. Followed by corn, red beans, salsa verde, diced avocados, a dash of cotija cheese and cilantro. You could also make a small buffet where everyone gets to select their favorite toppings!
