Mexican Red Rice (Abuela’s Recipe)

Cuisine: Mexican
Prep Time: 15 minutes
Cook Time: 30 minutes

This red rice recipe is a Mexican staple side dish for the entire family to enjoy.

This is not your typical rice, it’s abuela’s recipe for Mexican red rice! Every single Mexican house serves this awesome side dish. I used a little spice to give a twist and believe me, it elevates it to another level.

This dish goes with just about everything, and there are many variations... even on Hispanic Kitchen! The essential ingredients are rice, tomatoes, garlic, onion, carrots, and broth (chicken or vegetable broth). Most recipes include peas as well, but yellow corn and chipotle aren't usually on the ingredient list. My abuelita doesn't make it any other way.

Now, if you happen to prefer green over red (this applies to salsas too), or if you just want a rice side with a different flavor, try this recipe for Mexican green rice. Better still, make both and see which one the family prefers!
