This red rice recipe is a Mexican staple side dish for the entire family to enjoy.

This is not your typical rice, it’s abuela’s recipe for Mexican red rice! Every single Mexican house serves this awesome side dish. I used a little spice to give a twist and believe me, it elevates it to another level.

This dish goes with just about everything, and there are many variations... even on Hispanic Kitchen! The essential ingredients are rice, tomatoes, garlic, onion, carrots, and broth (chicken or vegetable broth). Most recipes include peas as well, but yellow corn and chipotle aren't usually on the ingredient list. My abuelita doesn't make it any other way.

  1. Heat the oil in a large skillet. Add the rice and stir over medium-high heat until golden brown.
  2. Meanwhile, blend chicken broth, tomato sauce, garlic, onion and chipotles.
  3. Add the tomato mix to the rice; lower heat and cover.
  4. Cover with peas, corn and chopped carrot and simmer for 20 to 25 minutes, until all the liquid is absorbed.
  5. Remove from heat and allow to sit covered for 5 minutes.
  6. Fluff with a fork and serve.
