This recipe is super-filling and packed with flavors; it's kind of the perfect lunch or dinner in every way.

 Chickpeas are an absolute must for your diet as they are completely bursting with nutrients, minerals, and are high in fiber and protein. Chickpeas are also a great way to keep your weight down and your belly full, because dietary fibers function as "bulking agents" which increase a feeling of fullness and help reduce your appetite.

This meal is a great vegan or vegetarian dinner. For vegans, you can replace the yogurt sauce with a tahini dressing .

Chickpeas, Sweet potatoes
  1. Preheat oven to 450. Mexican Buddha Bowl
  2. In a bowl mix, the chickpeas with the seasoning and olive oil.
  3. Spread the seasoned chickpeas on a baking sheet in a single layer.
  4. Cook for 35 minutes or until browned and crispy.
  5. Stirring half way through.
  6. While chickpeas are cooking, boil your sweet potato pieces until soft; about 8 minutes.
Yogurt Garlic Sauce
  1. Mash garlic into a paste and mix into yogurt; add all remaining ingredients.
  2. Chill for at least 1 hour for best results.
Buddha bowl
  1. Divide all ingredients between 2 bowls and serve with yogurt garlic sauce.
