What do we love about this lemon chicken with barley recipe? It's deliciously simple, easy to make and nutritious! That's the mantra of many a household when it comes to time to cook dinner for the family. This recipe is a good example of getting a lot for your money. You only need seven ingredients, and they're all easy to find at your local supermarket. We went shopping at Publix, where we took advantage of great deals like $1 off any one Knorr® One Skillet Meals. The one skillet meals come in several different flavors, and they're a great way to kick-start your dinner. They come with sustainably sourced ingredients and are nicely seasoned. All you need to do is add protein and veggies.

Lemon Barley Chicken

For our one-skillet meal, we wanted to use an ancient grain like barley (and this is organic barley, FYI). It's a creative departure from the norm that gives the dish a nutty flavor and chewy texture. We followed the package directions and added lean, boneless and skinless chicken, baby spinach and garlic. It's a good idea to toss the chicken in just a tiny bit of flour before adding it to the skillet, as it gives the meat a nice breaded coating. You can also experiment with your choice of protein and veggies.

This lemon chicken and barley meal for four comes together in less than half an hour and is super-easy to prepare. As an added bonus, you'll clean up quickly since you're only using one skillet! Directions

  1. Heat your olive oil in a large nonstick skillet over medium-high heat. Toss your chicken with flour and then cook 4 minutes until browned. (Chicken will continue to thoroughly cook in step with the barley.)
  2. Add water, carrots and contents of Knorr® One Skillet Meals to the skillet and bring to a boil. Cover turn down the heat to medium-low and simmer 23 or until barley is tender.   3. Place your spinach on top of the barley mixture and cover. Remove from heat and let stand covered 2 minutes (the heat will begin to wilt the spinach).
