Jumbo Shrimp With Avocado Dip

This is light, tasty appetizer to share with friends and family! It is a simple, quick and easy recipe that can be made a day ahead. If you are not crazy about cooking your own shrimp, you can purchase already cooked shrimp. Now that’s quick and easy! A fun way to serve this is using shot glasses for the dip and adding 2 shrimp per glass. Make it more festive by filling some of the glasses with red cocktail sauce for a fun presentation.

Ingredients

  • For the Shrimp
  • 1 pound jumbo shrimp cleaned, peeled, with tails on
  • 5 cups water
  • 4 tablespoons salt
  • For the Avocado Dip
  • 1 large avocadoes
  • 1/2 cup buttermilk
  • 1/2 cup Sour cream
  • 3 green onions sliced
  • 1 jalapeño pepper sliced
  • 2 cloves garlic sliced
  • 1/3 cup cilantro chopped
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt

Directions

  1. Bring the 5 cups of water to a boil, add the salt and stir until dissolved. Carefully add the shrimp and poach in water for just 2 minutes or until they turn pink. Remove them from hot water and quickly cover them with cold water. After about 10 minutes drain completely, cover and keep chilled until ready to use.
  2. In the blender combine all of the ingredients for the avocado dip. Blend until smooth, taste for salt. Chill in refrigerator for at least 1 hour serving.
  3. Arrange shrimp on a serving plate with avocado dip. You could add some veggies like carrots, peppers, and celery for dipping also. If you are in a hurry, you could also buy shrimp that is already cooked.
