After huevos rancheros, this is the next favorite Mexican breakfast! They're scrambled eggs with chile (spicy pepper), onions and tomatoes. Add a side of refried beans, sliced avocado and some warm tortillas and you will be in Mexican breakfast heaven.

  1. Heat oil in a medium skillet over medium-high heat.
  2. Add onion, jalapeño, and tomato, season with salt and pepper, and cook, stirring, until soft; about 5 minutes.
  3. Add eggs and cook, folding eggs over in large curds occasionally, until cooked through; about 4 minutes.
  4. Serve with a side of warm tortillas and enjoy.
