  • 8 egg whites
  • 6 Nopales sliced
  • 10 green tomatoes
  • 1 white onion
  • 2 garlic cloves
  • 1/2 cup cilantro chopped
  • 2 serrano chiles
  • 1 cup chicken broth
  • 1 tsp salt
This perfect breakfast pairing of eggs and nopales brings two superfoods into one power breakfast.

Every time I hear the world nopales (Spanish for cactus) it brings me back to my childhood in Mexico. We used to eat a lot of recipes with it as an ingredient. As an adult, I like to cook with nopales because as I've come to find out, it is a superfood with high levels of fiber and vitamin C, among other amazing health properties.

These huevos ahogados con nopales are a fun twist on the classic recipe and super delicious for breakfast! Pair them with tortilla chips or corn tortillas and you won't ever regret making it.


  1. Mix in a blender green tomatoes, white onion, garlic cloves, cilantro, serrano chiles, chicken broth and salt, until smooth.
  2. Pour sauce into a medium saucepan and bring to a boil over medium heat, cook for 15 minutes. Lower heat, add nopales and egg whites but do not mix them in. Let them cook for four minutes inside the salsa.
  3. Serve immediately and enjoy with a side of your favorite refried beans!
