Cook bacon in fry pan until well done, remove and place on paper towel to cool. Crumble and set aside.
Add onions to bacon drippings; cooking until tender. In a large bowl, combine bacon, Mexican-style hominy, flour, tomatoes, cayenne, salt and pepper.
Add 1 cup cheese; mix well. Spread mixture into lightly greased 9×13 pan; bake for 25 minutes. Remove, top with remaining cup of cheese, sprinkle bell peppers on top and return to oven for 5 more minutes or until cheese is melted and bubbly.
