Hominy Cheese Casserole

Cheese and hominy... what's not to love? With this recipe, you'll have an irresistible casserole to pamper your loved ones.


  • 3 pieces bacon
  • 1 cup onion diced
  • 1 can (29 oz) Teasdale White Hominy drained
  • 1 tablespoon flour
  • 2 large tomatoes diced
  • 1 teaspoon cayenne pepper
  • salt and pepper to taste
  • 2 cups cheddar cheese grated (divided use)
  • 1/2 cup red bell peppers diced
  • 1/2 cup green bell peppers diced

  1. Heat oven to 350ºF.
  2. Cook bacon in fry pan until well done, remove and place on paper towel to cool. Crumble and set aside.
  3. Add onions to bacon drippings; cooking until tender. In a large bowl, combine bacon, Mexican-style hominy, flour, tomatoes, cayenne, salt and pepper.
  4. Add 1 cup cheese; mix well. Spread mixture into lightly greased 9×13 pan; bake for 25 minutes. Remove, top with remaining cup of cheese, sprinkle bell peppers on top and return to oven for 5 more minutes or until cheese is melted and bubbly.
