Habichuelas con Huevo (Honduran-Style Green Beans with Eggs)

  • 1 pound fresh green beans washed and cut
  • 1/2 cup onion finely diced
  • 2 garlic cloves minced
  • 2 eggs lightly beaten
  • 1 tablespoon Olive oil or canola oil
  • 1/2 small red bell pepper diced
  • salt and pepper to taste
  • ground cumin to taste

Hondurans love green beans with eggs! This combination is truly delicious and very nutritious.  The green beans are low in calories, high in fiber and potassium, and there’s very little sodium. This is great for everyone, but especially for individuals suffering from high blood pressure.

So, imagine the nutrition punch this recipe has if we add eggs to the beans! Eggs are an excellent source of complete protein and fat-soluble vitamins. Consider making it for a ‘Meatless Monday’ or ‘Meatless Friday’ paired with brown rice.

  1. Blanch the green beans (immerse in slightly salted boiling water for about 1 minute and immediately place in iced water to stop the cooking process). Drain and reserve.
  2. In a large skillet, heat the oil and soften the onions until translucent.
  3. Add garlic and red pepper.
  4. Add green beans and eggs.
  5. Season with pinch of salt and pepper to taste.
  6. Continue to cook until eggs are fully cooked and green beans are heated through.
  7. Serve over rice.
