Chicken fajitas on a pizza? This fusion food is a fun dish that you can whip up with just a few ingredients.

This Grilled Chicken Fajita Pizza is a fun and creative fusion of two delicious finger foods. It's easy to make with store-bought pizza crust and sauce (though you can make your own, of course!) and can be enjoyed as a weeknight meal or when guests come over. The recipe calls for grilling, but you can use a comal, or stove-top griddle, instead.  And if you like this pizza fusion, check out what happens when pizza meets flank steak

Ingredients

  • 1 pound chicken breast boneless and skinless
  • 1 large red onion cut in half-inch-thick slices
  • 1/2 cup vegetable oil
  • 2 large poblano peppers
  • 2 12-inch pizza crusts store-bought
  • 1/2 cup pasta sauce store-bought
  • 3 cups monterey jack cheese
  • 2 tablespoons cilantro freshly chopped (optional)

Directions

  1. Lightly cover the chicken and onion with oil, salt and pepper.
  2. Grill the chicken, onion and peppers for about 8 minutes or until the chicken is well cooked and the vegetables tender, turning them over once. Don’t worry if the peppers turn black when grilling. They will peel easily once they cool.
  3. Wrap the peppers in aluminum foil and let them rest for 5 minutes. Peel and cut them. Cut the chicken into thin slices.
  4. Grill the top part of the pizza crusts for 1 minute and set aside. Spread the pasta sauce on them and cover them with the chicken, vegetables and cheese.
  5. Grill the pizzas with the lid on, or until the cheese melts, about 3 minutes.
  6. Optional: Sprinkle freshly chopped cilantro on the pizzas.
