Who doesn't love Guacamole? This Green Chile Guacamole steps it up a notch with the smoky flavor from roasted green chiles. This recipe is from our friend Gemma Aguayo-Murphy from EverydayLatina.com. Roast green chile in the oven for about 10 mins (do not let it burn!) Put in plastic bag to let skin come off flesh. Wearing gloves or using paper towels, peel skin and removes seeds with spoon. Cut into small pieces.
Heat onion on skillet until it softens and browns on the edges. Cut into small pieces.
Spoon avocado and mash in a bowl.
Add the rest of ingredients into bowl and mix well. Add avocado pits to slow the browning process. Do not add salt (it will speed up browning process). Add salt to the amount of guacamole you are ready to eat.
