Fresh Tomatillo and Jalapeño Salsa

This delicious tomatillo and jalapeño salsa is perfect as a dip or to top your favorite dishes.

There's nothing like a homemade salsa to add freshness and aroma to your food. This tomatillo and jalapeño salsa brings together a few simple ingredients that combine to lend a burst of flavor to your dishes. A good salsa verde shouldn't be overly complicated. You just need to keep it natural and with ripe green tomatillos, spicy jalapeños (seeded or de-seeded, depending on how much heat you like), fresh cilantro, red onion and lime.

This salsa makes a terrific dip for nachos, or you can serve with tacos, flautas, enchiladas and much more. Note: The tomatillos will release a bit of water. You could drain some of it so that your salsa is not so watery.

Ingredients

  • 8 tomatillos
  • 2 jalapeño peppers
  • 2 cloves garlic
  • 1/4 cup red onion finely diced
  • 1 handful cilantro chopped
  • 1 lime juiced
  • teaspoons salt

Directions

  1. Remove the husks from the tomatillos and wash off. Roughly chop the tomatillos, jalapeños and slice the garlic.
  2. Transfer to the blender or processor, add the lime juice and 1½ teaspoons of salt. Pulse 7 to 8 times to achieve a coarse-looking salsa.
  3. Taste for salt, then transfer to a bowl. Fold in the red onions and cilantro, cover and let sit for 20 minutes. Serve at room temperature.
