There's nothing like a big bowl of fresh guacamole! Avocados are a main staple in my kitchen. I could not imagine my Mexican meals without avocado in some form or another. Here, I share with you three easy preparations for serving fresh guacamole.

You have three delicious choices: simple, rustic and a creamy version of this most popular dip! In my opinion, the rustic version is the most beloved of the three. Served with homemade tortilla chips, it can be a meal in itself. The simple version is ideal for adding to tacos. It's not too chunky and you can enjoy pure avocado flavors. And finally, the creamy version is perfect for drizzling over nachos or for dipping fresh vegetables. Three different ways to serve guacamole to satisfy all tastes.

  1. For Simple Guacamole: Add the avocados and lime juice to a bowl. Use a fork to mash and combine. Add the remaining ingredients. Taste for salt. Cover with plastic wrap directly onto guacamole and chill until ready to serve.
  2. For Rustic Guacamole: Combine all of the ingredients. Taste for salt. Cover and chill until ready to serve.
  3. For Creamy Guacamole: Combine all of the ingredients into the blender. Blend on high until smooth. Scrape down the sides with a spatula. Taste for salt and blend on high for another 30 seconds. Transfer to bowl and cover with plastic until ready to serve.

Chef Notes

Plan ahead and purchase your avocados green. Place in a cool, dark spot to ripen. Typically it will take about 4-5 days until they turn darker and are perfectly ripe. It should be just slightly soft to the touch. To keep green after slicing, place wrapped avocado in a plastic storage bag with a sliced onion that is unwrapped. Keep refrigerated.
