Homemade Dulce de Leche
pure vanilla extract
(or use vanilla bean seeds)
Combine all the ingredients in large pot over medium heat, stir until the sugar is dissolved.
Add the baking soda.
Bring to a very slow simmer and reduce the heat to low. Stir occasionally during the first 1.5 hours until it darkens a bit in color (should be a light beige color).
Skim foam off the top as you see it.
Continue cooking an additional 1-1.5 hours until the mixture is significantly reduced and starts to thicken and the color changes to a caramel tone.
You have to stir frequently during the last 1-2 hours so it doesn’t burn!
