Good things come to those who wait, and that is the case with this easy crock-pot chile verde recipe. Chile verde is not just a delicious stew, its meat is tender after being cooked in a tomatillo-based sauce. The meat can either be eaten in a tortilla, with white rice on the side, or you can enjoy the chile verde alone.

This recipe requires very little work, but it does require 1 hour of cook time.


  • 3 tablespoons olive oil
  • 1/2 cup onion chopped
  • 2 cloves garlic minced
  • 3 pounds boneless pork shoulder cubed
  • 5 cans green salsa 7 ounce
  • 1 can diced jalapeno peppers 4 ounce
  • 1 can diced tomatoes (14.5 ounce)

  1. Heat the oil in a large skillet or Dutch oven over medium heat. Add the onion and garlic; cook and stir until fragrant.
  2. Add cubed pork, and cook until browned on the outside. Transfer the pork, onions, and garlic to a slow cooker, and stir in the green salsa, jalapeno peppers, and tomatoes.
  3. Cover, and cook on low for 1 hour.
