This creamy chicken-cheese jalapeño dip is one of those appetizers that never fails to please a hungry crowd. There are never, ever any leftovers. This recipe is easy to whip up. You only need five ingredients, and you can play around with just about tasty chile and cheese. Want to try chile poblano and queso cotija? Go for it! Cheddar and jalapeño are easy to find in any supermarket, but feel free to experiment, and let us know if you came up with a winning combination of your own.

To save time, you can plan ahead and have your chicken already cooked, or you can buy a roasted chicken in the store and shred it yourself. Serve with crispy tortilla chips and trust me, everyone will adore it!

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 8-oz. package cream cheese softened
  • 1 cup Mayonnaise
  • 1 8-oz. package cheddar cheese shredded
  • 2 jalapeño peppers finely diced

Directions

  1. Cook chicken as desired, allow to cool and shred. You may sear over medium-high with a dash of olive oil, until all sides are slightly golden. Then set oven at 350F and bake for 30 minutes, until it is thoroughly cooked. Or you can buy store bought chicken that's ready made.
  2. Place shredded chicken in a medium bowl, and mix in cream cheese, mayonnaise, shredded cheese, and jalapeno peppers.
  3. Transfer the mixture to a medium baking dish.
  4. Bake uncovered at 350 degrees for 30 minutes, or until the edges are golden brown. Serve with crispy tortilla chips.
