Colombian-Style Lentil Soup
  • 2tablespoons olive oil
  • 2 garlic clovesfinely chopped
  • 1/2cup white onion or shallots
  • 2 medium tomatoespeeled and seeded, finely chopped
  • 5-6cups water
  • 1 beef bouillon
  • 1cup lentilsrinsed and drained
  • 2 medium carrotschopped
  • 3 medium Russet potatoeschopped into small pieces
  • 1lb pork belly
  • 1 cut into small pieces(you can substitute with bacon, beef stew meat, or Colombian sausage)
  • salt and pepperto taste
  • chopped cilantroto taste, as garnish
  1. Heat oil in a large pot over medium low heat. Add the garlic and onion and cook for about 5 minutes. Then, add the chopped tomatoes and cook for another 5 minutes or until they're soft.
  2. Add water, cover and bring to a boil. Then, add the beef bouillon, lentils, carrots, potatoes, pork belly, cumin, salt and pepper. You can add more water if you wish. Cover, bring to a boil over high heat and then cook at medium low heat for 35-40 minutes or until the lentils are tender.
  3. Once the lentils are done, taste for seasoning and add more salt and pepper if needed before serving.
  4. Serve immediately with some chopped cilantro and with a side of white rice and avocado.
