
Feel good about enjoying these delicious dairy-free, refined sugar-free icy treats this summer!
These coconut avocado popsicles may not seem like your average frozen treat, and they're not! This recipe is dairy-free deliciousness, a perfect blend of creamy avocado (which is an underrated dessert ingredient, by the way) and sweet coconut.
Ingredients
- 2 medium avocados peeled and pitted
- 1 can coconut milk full-fat
- 1 lime juiced
- 2-3 tablespoons maple syrup
Directions
- Place all the ingredients in a blender and blend until smooth. Taste mixture and if it is not sweet enough, add additional maple syrup to your liking.
- Pour mixture into popsicle moulds and freeze for at least 3 hours, or until popsicles are frozen.
Chef Notes
To unmold the popsicles easily, run them under hot water or dip them in a large bowl of hot water for a few seconds at a time until they come loose.
