Classic Breakfast Chicken Quesadilla

Quesadillas are a classic Mexican breakfast recipe and these chicken quesadillas couldn't possibly be easier to make!

Make them for brunch or for breakfast tomorrow. You can make them with wheat flour tortillas like I did here or with corn tortillas, and fill them with anything you'd like along with the cheese.


  • 1 can refried beans
  • 6 Whole wheat flour tortillas 8-inch diameter
  • 1-1/2 cups chicken cooked and chopped
  • 1-1/2 cups cheddar cheese reduced-fat and shredded
  • 2 tablespoons butter
  • green onions Thinly sliced, optional
  • Sour cream optional

  1. Place the desired amount of tortillas on a flat surface and spread 1/3 cup bean mixture over half of each tortilla. Top each with 1/4 cup chicken and 1/4 cup cheese. Fold each tortilla in half to cover filling.
  2. Add butter to a large skillet; heat over medium heat and place 2 quesadillas side- by-side in skillet. Cook 5 minutes, turning once, or until golden brown on each side and cheese melts. Repeat with remaining quesadillas.
  3. Garnish with onions and sour cream, if desired.
