Christmas Pork Roast

We are only a few days away from Christmas! This pork roast will surprise and delight your family and friends. This recipe is not only delicious and super easy to make, but you can also use the leftover meat for sandwiches!

Ingredients

  • 1 tablespoon dried oregano
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 2 teaspoons dried sage
  • 1 teaspoon dried rosemary
  • 8-10 garlic cloves minced
  • 1/2 cup sour orange juice (if fresh sour oranges unavailable, commercially made juice is available at Latino grocers)
  • 1/4 cup olive oil
  • salt to taste
  • 1 4-5 pound center cut bone-in pork roast

Directions

  1. Pre-heat oven at 400ºF.
  2. Combine all ingredients for the rub.
  3. Pierce the meat with a sharp knife 3 or 4 times. Season the meat with the rub, making sure some of it goes inside the perforations.
  4. Place meat on a baking dish and cover loosely with foil.
  5. Roast for about 15 minutes and immediately after lower the heat to 375ºF.
  6. Roast for about 1½ hours.
  7. Remove foil and put under the broiler for 3-5 minutes.
  8. Take roast out of the oven; let it rest for about 10 minutes before serving.

Chef Notes

A variety of vegetables can be added to the roast half way thru the roasting time.
