Chorizo Jalapeño Grilled Cheese Sandwich

Three cheese, Mexican chorizo and jalapeño grilled cheese sandwich! Warning! You may come back for more!

What comes to mind when you think of a grilled cheese? Melted cheese and bread, right? Well, get ready to take your sandwich to the next level! Grilled cheese is a lot like a taco or quesadilla. Anything goes when it comes to fillings for these tasty sandwiches. One of my other favorites is this version with beef fajitas.

For this recipe, I'm keeping it simple with two ingredients I love to cook with. Mexican chorizo and jalapeños en escabeche (pickled jalapeños) are perfect together. I'm also using three types of cheese, because why not?? Feel free to experiment and add your favorite fillings. In fact, why not plan ahead for the best grilled cheese sandwich night? Grill, sauté or roast your favorite ingredients, like sweet onions, mushrooms, and peppers (both sweet and spicy), along with your favorite cooked meats, like carne asada, grilled chicken, chorizo or smoky ham. Then gather a few friends and see who can assemble the tastiest grilled cheese of the night!

  1. Preheat large cast-iron pan or griddle pan to medium/low heat for 5 minutes.
  2. In a bowl, combine the three cheese varieties and toss to mix.
  3. Spread about 1/2 tablespoon of mayonnaise onto one side of each bread slice.
  4. Place 6 of the slices, mayonnaise side down, onto hot surface. To each one, add about 1/2 cup of cheese, 2 tablespoons of chorizo, a couple slices of jalapeño and then another 1/4 cup of cheese. Top each one with remaining slices of bread, mayonnaise side up.
  5. Cook for a few minutes, pressing gently with a spatula. If you can cover the sandwiches with a lid, this will help create steam so the cheese will melt quicker. Once browned and crispy, flip over and cook for 2-4 minutes. Remove from heat and let sit for a few minutes before enjoying.

I recommend using sliced artisanal breads for grilled cheese sandwiches.
