Scrambled eggs, chorizo, chile and refried beans... grab some tortillas and enjoy a fantastic breakfast!
Huevos revueltos is a classic and popular Mexican breakfast dish. Eggs are so versatile, you can scramble them with almost anything you can imagine. Abuela loved preparing them with chorizo and chile verde, and of course, with a side of frijoles refritos y warm tortillas. It’s quick and easy to prepare, plus it’s very versatile and makes great leftovers. Enjoy with your favorite salsa!
In a skillet over medium heat, add the chorizo and cook, breaking apart into pieces with the back of a spoon. When it starts to render fat, add the onions and chile and continue to cook for about 8 minutes or until onions are softened and chorizo is lightly browned and cooked through. Drain excess fat, if any.
Add eggs and cook until the eggs set, then stir to combine.
Serve hot with a side of refried beans and warm tortillas.
