If you like fajitas, you are going to love these Chile Lime Chicken Alambres! Alambres are a popular dish that is traditionally made with thin slices of beef and roasted poblano peppers, but like many Mexican recipes, there are a variety of tasty twists. Made with thinly sliced chicken breast, bacon, colorful bell peppers, onions, serrano chiles, lime juice, and lots of ooey-gooey melted Oaxaca cheese, these super-easy alambres de pollo are just the choice when you need dinner on the table in a hurry.

  1. Fry the bacon in a large, nonstick skillet over medium-high heat until fully cooked but not crisp.
  2. Add the chicken and saute until no longer pink. Stir in garlic, serrano chiles, bell peppers, onion, and lime juice; season with ground cumin, crushed oregano, and salt to taste.
  3. Cover and reduce heat to low; let simmer for 10 to 12 minutes.
  4. Remove from heat. Sprinkle Oaxaca cheese over the chicken.
  5. Cover and let sit for about 2 minutes or until the cheese has completely melted.

Chef Notes

This recipe can also be prepared with thin-cut steak or pork chops cut in thin strips. Serve with warm corn tortillas.
