Chicken, Cheese and Potato Casserole

That's why this chicken, cheese and potato casserole is such a great option for lunch or dinner. Whenever you get to cook with only one dish, you save time and minimize mess. Who doesn't want that?

I made this version specially for a guest who couldn't handle spicy food, but if you want to add some heat to the dish, toss in a few jalapeños into the mix!

  1. Preheat oven to 350º F.
  2. Lightly spray a baking dish with nonstick cooking spray, and set aside.
  3. In large bowl, mix together the potatoes, butter, chicken, sour cream, green onions, and cheese. Stir to combine.
  4. Add the beaten eggs, salt and pepper, and cumin. Stir to combine.
  5. Stir in the paprika and pour mixture into the prepared pan. Top with grated mozzarella cheese.
  6. Cover with aluminum foil and bake for 40 minutes.
  7. Uncover and bake for 10 more minutes.
  8. Garnish with sliced green onions and enjoy!
