Carne con Papa (Meat and Potatoes)

Meat and potatoes: who can't relate to that, right? This recipe is super easy to put together. You just need 10 ingredients and all you have to do is throw it all together in a Dutch oven!

Browning the meat before cooking everything together is important, because it helps seal in the flavor and gives it that nice outer crust. I know many people don't like cooking with lard, but it's a very versatile fat. It doesn't smoke at high temperatures so it's great for frying or roasting meats.

Finally, I love adding bay leaves to stews and other slow-cooked dishes. The leaf imparts added flavor the longer it simmers with the rest of the ingredients.

 

Ingredients

  • pounds beef cubed
  • 4 tablespoons lard
  • 1 tablespoon salt
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 large onion chopped
  • 1 large green bell pepper chopped
  • 4 tablespoons tomato puree
  • 1/2 cup dry white wine
  • 1 cup water
  • 2 pounds potatoes cubed

Directions

  1. In a large pot or Dutch oven, brown the meat in the lard.
  2. Add the salt, black pepper, bay leaf, onion and bell pepper, and sauté lightly. Add the tomato puree, wine and water, and stir to combine.
  3. Simmer, covered, until the meat is just about finished. Add the potatoes and simmer until the meat and vegetables are tender (about an hour).
