Caprese-Zucchini Spaghetti

This is a guilt-free dish that will satisfy your pasta cravings.

This Caprese zucchini spaghetti is also incredibly quick and easy to make, and is super satisfying! You can do it with my recommended caprese or add any other sauce like pesto or pomodoro. If you prefer rice, try this recipe instead.

Ingredients

  • 2 zucchinis
  • 2 Roma tomatoes
  • 1 teaspoon Mexican oregano
  • 1/2 cup mozzarella cheese
  • 1/4 cup olive oil
  • salt to taste
  • pepper to taste

Directions

  1. Cut the zuchinni lenghwise with a mandolin or sharp knife to obtain spaghetti-like strips.
  2. In a saucepan with boiling water, blanch them for 1 or 2 minutes. Strain.
  3. Cut the tomatoes and cheese in small cubes, season with olive oil, oregano, salt and pepper, and place over each dish with the zucchini.
