Barbecue Chicken Pinchos With Green Pesto

There's a reason people have been eating meat off a stick for centuries! It's easy, it's fun, and it's tasty! I'm happy to add these barbecue chicken pinchos to the list!

This is a delicious twist on BBQ! Because who doesn't love food on a stick?  These barbecue chicken pinchos with green pesto will leave your guests licking their fingers and asking for more.


  • Chicken
  • 2 in chicken breasts cut in cubes
  • 18 cherry tomatoes
  • 6 bamboo skewers soaked for 20 minutes
  • Green Pesto
  • 1/2 cup parsley
  • 1/2 cup coriander
  • 1/2 cup basil
  • 1/4 cup dill
  • 1/4 cup tarragon
  • 1/4 cup mint
  • 2 filets anchovy
  • 2 tbs capers
  • 3 cloves garlic
  • 1 lemon juiced
  • 1/2 cup olive oil

  1. Put all the ingredients of the pesto in a blender, and blend until very smooth. Reserve.
  2. In each skewer, place the chicken cubes and cherry tomatoes, alternating as you go.
  3. Place the kebabs, or pinchos, in a tray and cover with half of the pesto. Reserve the other half.
  4. After the skewers have marinated for 20 minutes, put them on a very hot grill, turning them frequently until golden brown on each side.
