  • For the Salmon
  • 1 lb salmón filets
  • 1 lb zucchini sliced
  • 1 tablespoon olive oil
  • 1 small lemon sliced
  • salt and pepper to taste
  • For the Lemon-Chipotle Butter Sauce
  • ½ cup unsalted butter
  • 2 tablespoons lemon juice
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley
  • 2 tablespoons chili chipotle
  • salt and pepper to taste

The chipotle-butter sauce in this recipe takes your basic oven-baked salmon to a whole new level.

Baked salmon is one of my favorite things to cook when I need a quick and nutritious weeknight meal. You don’t need to do much to bring out the flavor of the fish, and there are many recipes that will have you sitting down to a gourmet dinner in less than half an hour.

This is one of my go-to easy salmon recipes because it all comes together in one pan and requires very little prep work. Plus, the lemon-chipotle butter sauce complements the flavor of the fish so well. It adds just the right touch of heat, balanced by the tartness of the lemon.

Serve with white rice or a side salad and enjoy a delicious, nutritious meal in 20 minutes! And if you like this recipe, try this version with aji amarillo.

Directions

  1. Preheat oven to 450º F.
  2. Place salmon filets on a baking pan and arrange zucchini slices around them. Drizzle zucchini and salmon with olive oil, salt and pepper.
  3. In a bowl, mash all the ingredients for the lemon-chipotle butter sauce. You can use a fork or a food processor.
  4. Pour a tablespoon of the sauce over each filet, and top each with a slice of lemon.
  5. Bake at 450º F for 10-12 minutes.
