
This recipe became one of my favorite ways to get my kids to eat their veggies!
Baked cauliflower al mojo de ajo is a buttery, garlic-infused, tasty way to serve up this versatile vegetable that even the pickiest palate will enjoy. I originally came up with this recipe as a delicious side dish to serve with dinner, but my kids loved it so much they started snacking on the garlic roasted cauliflower as soon as it came out of the oven. It was gone before dinner was served!
Now, I often bake a big batch of cauliflower for the whole family to snack for everything from family game night to watching a movie or a big sporting event.
Ingredients
- 1/3 cup butter melted
- 3 cloves garlic minced
- 1 teaspoon parsley dried
- 1 head cauliflower, cut up

Directions
- Preheat oven to 350° F. Lightly grease a large baking sheet with cooking spray.
- Mix together the melted butter, garlic, and parsley in a small bowl.
- In a large bowl, toss together the cauliflower with butter mixture, making sure the cauliflower florets are equally coated.
- Arrange the butter-coated cauliflower florets on the lightly greased baking sheet. Season with coarse salt. Bake at 350° for about 30 minutes until lightly golden and crisp. Remove from oven; serve. ¡Buen provecho!
Chef Notes
For added flavor, sprinkle ¼ cup grated parmesan cheese over the cauliflower florets just before baking.
