Bacon and Corn Dip

This dip is so tasty you might just skip the tortilla chips and eat it with a spoon!

Perfectly creamy, full of veggies and well, there's bacon. Not only will this bacon corn dip be a huge hit in the flavor department, but it is so easy to make and can be made ahead of time and reheated later! And if you like this easy dip, you have to try bacon guac!

Ingredients

  • 2 strips bacon cooked, crumbled
  • 3 cups corn
  • 2 tablespoons chives chopped
  • 1/2 cup red bell pepper diced
  • 2 small jalapeño peppers seeded and diced
  • 1/2 cup red onion diced
  • 4 ounces cream cheese
  • salt and pepper to taste
  • pinch cayenne pepper
  • tortilla chips for serving

Directions

  1. Mix all ingredients together in a large bowl. (For easy mixing let cream cheese come to room temperature.)
  2. Pour mixture into a 9x6 oven-safe dish.
  3. Bake for 20 minutes at 400ºF.
  4. Serve warm with tortilla chips and enjoy!
